Story - Trout Fishing Lake Atalanta

The Arkansas Game and Fish Commision stocks Lake Atalana with Catfish in the summer and Trout in the winter.  A week ago 2,500 catchable trout were stocked in this lake. This weekend was the first time having my little boat on these waters with the depth finder. Both days we fished were overcast, windy, and about 45 degrees. I was surprised how deep the lake was, about 40' at the deepest with nothing on the bottom. We caught most of our fish in the open water using little jigs and rooster tails. We didn't catch any on powerbait or corn. Most fish were caught about 5 feet deep in about 30 feet of water. 

I tried cooking these several ways:
frying - I think this stuff was a little below catfish on flavor.
smoking - This tasted OK, but I ended up making dip from the rest using cream cheese, etc.
dehydrating - These turned out the best. The only downside is the taste lingers a long, long time.
